4 points: SANITIZATION OF EQUIP. AND UTENSILS
An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. Sanitizer jug had just been replaced however the unit needed to be primed. The unit was primed to correct the violation. Please test the unit with chlorine sanitizer test paper at least daily. If the unit continues to lose prime it should be serviced.

Ice machine interior and bottom of the reach in freezers noted not properly cleaned. Food particles on the bottom of the freezers and mildew/slime on ice machine chute.

5 points: CROSS CONTAMINATION
Raw meat noted being stored above food not to be further cooked. Raw burger noted over pre-cooked chicken dipping sauces and coleslaw. Pre-cooked/ready-to-eat items moved above raw products and raw meat moved to bottom shelf to correct the violation.
4 points: SANITIZATION OF EQUIP. AND UTENSILS
An inadequate amount of chlorine sanitizer was noted in the final rinse of both dish machines in the bar. Both units will be re-checked in 10 days for proper concentration of chlorine sanitizer.
4 points: PERSON IN CHARGE
The Manager during the course of the inspection did not possess a Certified Manager's Certificate within the appropriate time. Certificate expired. Must show proof of certification or of signing up for the course/test within 10 days.
3 points: HANDWASHING LAVATORIES AND SUPPLIES
The hand washing lavatory noted with no cold or hot water provided. Hand sink in kitchen noted not functioning. Will be re-checked in 10 days. Until the hand sink is repaired hands should be washed in the bar since this the only functioning hand sink not in the dish sinks.
