I would suggest labeling the items being cooled with a date and time when the item started the cooling proces below 140?F. This will provide staff the information needed to properly cool the food item down to 41?F in the proper amount of time. Even if a mid-day staff change occurs. |

The rear storage room exit door sweep is missing allowing light to be visible under the door in turn could allow the entrance of insects and rodents (all of which are not present). |
