Inspector Comments: Method for proper cooling 140?F to 70?F within 2 hours 70?F to 41?F with in 4 hours. I would suggest labeling the items being cooled with a date and time when the item started the cooling proces below 140?F. This will provide staff the information needed to properly cool the food item down to 41?F in the proper amount of time. Even if a mid-day staff change occurs.
