An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. Sanitizer was way to strong as all 3 lines for the dish machine were in the sanitizer. Corrected on the spot and machine working correctly.

Raw meat noted being stored above food not to be further cooked. Observed whole muscle beef stored above shrimp in cook line cooler heads of cabbage next to chicken in 2 door upright cooler.
