| New smoker purchased that will be used to smoke meats outdoors. Contact John Osburn with the State Department of Health for a HACCP/Variance for this activity. It will be needed due to the lack of a hand sink in the new outdoor cooking area. He will be looking for the following informaiton to be addressed: -Meat will be placed on the smoker with a gloved hand or by use of an utensil -Access back into the building will be thru no-contact installed door at meat smoking patio -Once inside the building glove will be removed and discarded or utensil will be placed at ware washing location and hands immediately washed Something to that effect is what John will be looking for. Just reach out to him and ask for that documentation to get going. |
