Cheese sauce noted not being held at 140 degrees fahrenheit or above. Discontiue use of home style crock pot and place cheese sauce (queso) in steam table that can maintain a minimum temperature of 140?F. Will re-inspect in 10 days for correction of the violation.

An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. Bucket was noted empty. Will re-inspect for correction of violation in 10 days.

Walk-in cooler in food storage room in the facility being used for cold holding temp of 41 degrees F or less was not functioning adequately. Cooler temperature noted at 47?F. Will re-inspect for cooler repair after 10 days.

Hand washing lavatory in kitchen noted blocked with dishes and cold water valve was shut off. Corrected by turning valve back on and removing dishes.
