| Potentially hazardous foods noted not being thawed using approved methods. Vacuum packaged fish needs to be thawed with the bag cut open of the fish removed before thawing. Bacterial spores can activate in an anaerobic environment. To prevent this the fish has to be exposed to oxygen. |
