Raw chicken that was noted being processed on the counters were noted not being held at 41 degrees fahrenheit or below. The chicken was being cut for further processing was sitting on the counter for an extended period of time.
4 points: SANITIZATION OF EQUIP. AND UTENSILS
An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine.

2 points: THAWING POTENTIALLY HAZARDOUS FOOD
Potentially hazardous foods noted not being thawed using approved methods. Vacuum packaged fish needs to be thawed with the bag cut open of the fish removed before thawing. Bacterial spores can activate in an anaerobic environment. To prevent this the fish has to be exposed to oxygen.
