4 points: SANITIZATION OF EQUIP. AND UTENSILS
An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. Unable to check sanitizing concentration due to no water exiting spray bar on the sanitizing end of machine. Utilize 3 compartment sink to complete the sanitizing step for all utensils washed in dish machine until the sanitizing function has been restored and verified.

Food noted being stored not covered in food storage and walk in cooler. Observed dry ingredient storage bins in dry food storage area not covered and sauces and food items not covered in walk in cooler.

Sanitizer test kit noted not provided for chlorine testing in the dish machine.

Faucet in kitchen handwash sink noted not functioning. Hot water side faucet valve does not close staff are using the hot water shut off valve located on the wall below the sink to make sink operational.
