| Raw meat noted being stored above food not requiring further cooking to the same temperature. Raw meat noted stored over oyster sauce. Oyster sauce was out from below the raw meat to correct the violation. |
| 4 points: SANITIZATION OF EQUIP. AND UTENSILS |
| The temperature of the rinse cycle of the heat sanitizing dish machine noted not adequate to achieve final sanitization. The temperature was actually noted decreasing during the rinse cycle. The dish machine was only reaching approximately 152?F and this was likely occurring during the wash cycle as shown by the display on the machine and the dishwasher thermometer used by the inspector. This critical violation will be re-inspected on or before 6-25-26. A minimum temperature of 160?F is required during the rinse cycle of the dish machine for proper sanitization. If the dishwasher machine cannot be repaired before this date the facility must contact the Health Inspector to request an extension. |
