An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. After running the dish machine through multiple cycles the sanitatizer did not meet the minimum concentration.

Display shelving in 2nd floor and 3rd floor bar areas noted not clean. Observed debris build up on back bar shelving.

Utensils noted stored in an unprotected location. Observed utensils in the pre kitchen near food prep areas that are stored in bins with heavy debris build up. Also observed steak knives stored in the expo line near other clean utensils that has debris build up.
