Chicken and queso sauce noted not being held at 140 degrees fahrenheit or above. Steam table water level was slightly low and there were also empty spaces allowing steam to escape. Both of these factors may have contributed to the temperature noted at 121?F. Critical violation corrected by adding water closing open spaces with pans/lids and by increasing temperature on the unit to quickly increase the temperature of the food product being hot held. |
