Walls in the lower level food prep area noted not easily cleanable. The walls are unpainted absorbent wall board. Ceiling in the food prep area is bare duct work steel trusses and plumbing that is not easily cleanable. All food prep areas must have a ceiling that is not difficult to clean.

Kitchen employees was observed touching body parts and continuing to work without washing hands.

An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine in the main kitchen at approximately 10 ppm and in the bar area at 0 ppm.

Bare hand contact with ready to eat food noted not being avoided.

2 points: FOOD CONTACT SURFACES - CLEAN
Wooden and metal pizza peels not properly cleaned and sanitized at the proper intervals. Interior of microwave in main kitchen has food build up on glass platter.
