Inspector Comments: Reminder of proper cooling methods. Potentially hazardous foods must be cooled from 140 degrees fahrenheit to 70 degrees fahrenheit within 2 hours and from 70 degrees fahrenheit to 41 degrees fahrenheit or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be a major contributing factor in many foodbourne illnesses. |
