Beans that were cooking and prepped the day before still noted at 51?F. Strongly recommended to dispose of both containers of beans noted at 51?F. Critical violation corrected by disposing of beans and education on the topic. Shallow pans with a large surface area should be used or cooling wands purchased or used. |
