Pulled Pork and chicken noted not being held at 140 degrees fahrenheit or above. The warming unit was not turned on by accident and the meats cooled slightly below 140 degrees F. To correct the violation the warming unit was turned to the highest setting and the meat was allowed to rise to 165?F and then held at 140?F.
