The wing sauce was labeled for a 24-hour hold time but it had been used to toss wings. Once used with chicken the sauce becomes a TCS food and must be discarded within 4 hours. A critical violation was not cited because this was verbally communicated to the inspector; however any time a label is used it must reflect the 4-hour limit. Additionally the container must be washed rinsed and sanitized every 4 hours after the sauce is discarded.
