An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. Priming of the sanitizer pump was attempted but this did not remedy the problem. Re-inspection for correction of this critical item will occur by 5-14-26. If more time is needed due to service delays the inspector must be contacted to request a delay of re-inspection.

Sanitizer test strips for the dish machine should be readily accesible for the person working in the kitchen and be used at least daily to ensure that the dish machine is still properly sanitizing dishes. Use of test strips could have possibly prevented todays critical item by alerting the facility to the issue. It is unknown how long the dish machine has not been sanitizing dishes properly.

Milk noted not being held at 41 degrees fahrenheit or below. Milk in the dispenser must be disposed of and the dispenser taken out of service until it is repaired. A re-inspection for repair of the milk dispenser or correction of critical violation will occur by 12-18-25 unless the inspector is contacted regarding a delay.
