Raw beef noted stored over top of jalopenos and onions. Raw meats are never to be stored over foods not requiring cooking or that have a lower required final cooking temperature. Corrected by moving foods and training on the topic. |

Warming units/steam table noted not holding food at 140?F or above. The steam table had not been pre-heated before loading food. Also the food was allowed to cool slightly before loading into the steam table. In the future the steam table will be pre-heated and food will be loaded hot to prevent the temperature from falling below 140?F. Critical violation corrected through training on the topic. |
