Critical Violations
4 points: SANITIZATION OF EQUIP. AND UTENSILS
Inadequate sanitizing with quaternary ammonia was noted in the three compartment sink. Sink was emptied and refilled to correct the violation. Dishwasher noted not reaching 160?F noted at 155?F. Upon notification of violation it was found that the booster heater was not turned on. After turning on booster and letting the unit warm up it then reached the proper sanitization temperature of 160?F. Critical violation corrected.

Pot of broth noted on floor near cooking range. Plastic storage pans of raw meats noted stored on floor in walk-in cooler. Box of meat noted stored on floor in walk-in freezer.
