Philly steak cheese sauce mac & cheese noted not being held at 140 degrees fahrenheit or above due to the thermostat being accidentally turned down thus caused the hot holding unit to not maintain food items at or above 140 ?F. Observed temperatures of food items to be 86?F?F to 100?F. Food items out of temp were discarded immediately and replaced with new.
