Chicken noted not being held at 41 degrees fahrenheit or below. Raw chicken was noted not being kept at or bellow 41 degrees F while processing.

Hot holding unit in the facility being used for hot holding temp of 140 degrees F was not functioning adequately. Hot holding unit by 3 compartment sink and some of the units by the grill noted not at the proper temperature for hot holding.
