Critical Violations
5 points: CROSS CONTAMINATION
Raw meat noted being stored above food not to be further cooked. Raw chicken was noted being stored above lettuce in the walk in cooler. Violation was corrected immediatelly.
5 points: FOOD DISPLAY SERVICE AND TRANSPORT TEMP
Raw food noted not being held at 41 degrees fahrenheit or below. Raw meats and shrimp was not kept at appropriate temperatures while processing for a prolonged time period. Time rather than temperature was being used but in an inproper manner as a control for public health protection. Bean sprouts in water at room temperature were not properly marked with time within which it must be served or discarded.
4 points: SANITIZATION OF EQUIP. AND UTENSILS
An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. The sanitizer was not pulling up during the rinse cycle. This was corrected immediately.

Wiping cloths noted not stored in adequate sanitizing solution.
