| Thermometer calibration must be done correctly. The ''refrence temp'' is the measurement after putting the thermometer into the ice water bath (usually 32-35?F or so). The ''difference from reference'' is the reference temp minus 32?F. So if the reference temp is 35?F then the difference from reference temp would be 3?F.
