Time rather than temperature was being used but in an improper manner as a control for public health protection. No time noted for sushi rice for today. Also the pH meter was noted as inoperable not allowing for proper pH detection. New pH probe will be ordered and times will be written down immediately after preparation of product.

An inadequate amount of chlorine sanitizer was noted in the final rinse of the dish machine. No sanitizer present.
