Time rather than temperature was being used but in an improper manner as a control for public health protection. No time was marked on the sushi rice. The time it was prepared must be marked every time an new batch is prepared. Critical violation corrected this time through training on the topic. If this violation is found at the next inspection the violation will not be corrected on the spot and a re-inspection will need to occur. |

The hand washing lavatory in the back kitchen noted being used for other than hand washing. Milk jugs were found in the sink. Additionally the soap dispenser was not functioning adequately. Both of violations were corrected however. |
