4 points: SANITIZATION OF EQUIP. AND UTENSILS
The dishwasher display screen and operation are not functioning adequately. The unit seems to turn on and fill but the green start cycle button does not function or do anything. Pressing the power again drains the unit. A dish temp thermometer was placed in the unit to see if it was operating and the dish temp thermometer also never registered a temperature above 134?F. The rinse cycle must register a temperature of 160?F to be adequate for proper sanitization of dishes. The unit must be repaired or replaced within 10 days. There is no other proper method to do dishes as the facility does not contain a 3-compartment sink. A 2 compartment sink is present and will be used in the following manner until the dishwasher is repaired or a 3-compartment sink is installed: Dishes will be washed in hot soapy water in the first basin sprayed off with spray wand and then submerged in sanitizer in the second basin. This is only a temporary fix allowed for the 10 day correction period.
